‘Surf N Turf’: Buffalo Ribeye & Lobster with Sake Demi Glaze



  • Fresh Origins Micro Intensity Mix™
  • Buffalo Ribeye
  • Lobster Tail
  • Olive Oil
  • 2 tbsp Butter
  • 1 Garlic Clove
  • Salt, Pepper

Saki Demi Glaze:

  • 1 ½ tbsp Brown Sugar
  • 1 ½ ounces Sake
  • 1 ounce Orange Juice
  • 1 Garlic Clove
  • Salt, Pepper
  • 2 ounces Veal Stock
  • 1 Carrot
  • 1 Celery Stalk
  • ¼ of an Onion
  • ½ tsp Rosemary
  • ½ tsp Thyme
  • 1 Bay Leaf
  • 1 tsp Sriracha Chili



Boil lobster for 5 minutes. Cut in half down the middle so you have two long pieces. Brush on a mixture salt, pepper, melted butter and diced garlic. Place directly on the grill (meat side down) for a few minutes, careful not to overcook.

Buffalo Ribeye:

Slice ribeye into small thin pieces, season with salt, pepper and olive oil, and place on tin foil on the grill. Cook until medium rare.

Saki Demi Glaze:

Chop carrots, celery, onions, and garlic, and put in a food processor. Combine all ingredients in a small pot and let simmer.

To Plate:

Lay out lobster and ribeye medallions, pour saki demi glaze over both and top with Micro Intensity Mix™.

Lemon Glazed Tilapia



  • 2 Fresh Origins Buzz Button™ for aesthetic and flavor
  • 1 lb. Tilapia filet (about 4 filets)
  • 8 oz. Mushroom crimini or white, sliced
  • 1/4 onion, chopped coarsely
  • Olive oil
  • Salt, Pepper


  • 5 Fresh Origins Buzz Button™ (crumbled)
  • 1/2 cup White Wine (not dry)
  • 2 tsp Flour
  • 1 tbsp Large Capers, chopped
  • 1 tbsp Chicken stock paste
  • 1/2 Lemon, juice only


Apply salt and pepper to Tilapia (both sides), reserve.  Combine all Sauce ingredients in a cup or small bowl, reserve.  Heat olive oil in pan. Add onion, cook onion until clear.  Add Mushrooms, cook until browned.  Add Sauce to pan, stir until thickened.  Cook Tilapia quickly in separate pan with olive oil over high heat to sear the outsides.  Inside will be done at this point.  Plate Sauce first, then place Tilapia over Sauce.  Add 2 Fresh Origins Buzz Button™.
